For all of you not in-the-know, Chang is the MAN. We call him the Korean Cowboy because he loves making cowboy boots, has porkchop sideburns and plays opera. He reminds me of the guy in the Japanese Spaghetti Western "Tampopo." If you haven't watched Tampopo go rent it immediately. (Although make sure you have ramen on hand because you will be craving it.)
